El Tesoro Añejo comes from La Alteña distillery in the highlands of Jalisco, owned and operated by the Camarena family since 1937. Master distiller Carlos Camarena oversees production using methods that have remained largely unchanged for generations. The distillery slow-roasts 100 percent blue Weber agave in traditional stone ovens for roughly three days, then crushes the cooked piñas with a two-ton tahona wheel carved from volcanic stone. This ancient extraction method pulls sugars and fibers together, creating a richer fermentation base than modern roller mills typically achieve. Fermentation happens in open wooden vats using naturally occurring yeasts, and distillation takes place in small copper pot stills. The resulting tequila rests in ex-bourbon barrels for two to three years, developing layers of oak and caramel while retaining the agave character that defines highland expressions. The altitude of the Los Altos region produces sweeter, fruitier agave plants compared to their lowland counterparts, and that brightness carries through even after extended aging. El Tesoro Añejo rewards anyone seeking a tequila that balances traditional craftsmanship with genuine complexity.
