Minimal intervention, maximum character. These are wines made with as little added as possible: wild yeasts, little or no filtering, a light touch with sulphur and a great deal of trust in the fruit. The results can be wild, savoury and gloriously alive, a world away from anything mass-produced. All made with real care for the land they come from.
