The Wine
Pouilly-Fuissé from one of Mâcon's most serious estates. Ferret's Les Perrières has the weight to sit beside a roasted chicken or butter-poached lobster, and enough stony acidity to keep the richness honest through every course.
Worth Knowing
The domaine dates to 1840 and sits in the amphitheatre of vineyards above Fuisse. Louis Jadot bought it in 2008.
