The Wine
The 2015 vintage was a warm, dry year in Champagne, which gave Dom Pérignon more richness than usual without losing the tension that makes it work at a serious table. Fine bubbles reset the palate between courses, and the acidity is sharp enough to cut through anything from oysters to roasted lobster.
Worth Knowing
Dom Perignon is only ever a vintage champagne. If a harvest is not good enough the house simply does not declare that year, rather than blending its way out of it.
