The Wine
Premier Cru Chablis from one of the appellation's most uncompromising producers. Defaix ages longer than most before release, which means the wine arrives at the table with the structure to stand up to serious seafood, scallops, lobster, or a whole roasted fish, where that chalky, saline backbone cuts through fat and keeps every bite clean.
Worth Knowing
Defaix ages his Chablis on the lees far longer than almost anyone in the appellation. The village wine gets thirty months and some bottlings are held for close to a decade before release.
