Napa Cabernet at its most generous. The weight and ripe fruit call for something equally substantial at the table, so aim for a dry-aged ribeye or braised short rib; the tannin structure needs protein and fat to land properly rather than dominate.
Worth Knowing
Named after Rancho Caymus, a nineteenth century Mexican land grant. Charlie Wagner founded it in 1972 with his wife Lorna and son Chuck.
