Sherry oak, the Macallan way
The Macallan has distilled on the Easter Elchies estate in Speyside since 1824. The Sherry Oak 12 is its classic statement, and a benchmark for what sherry-cask whisky can be.
It is matured for at least twelve years exclusively in first-fill European oak casks seasoned with Oloroso sherry from Jerez, Spain. No bourbon casks, which is what gives it that dried-fruit, spice and oak character.
Rich and rounded, it is the bottle most people picture when they think of The Macallan.

Worth Knowing
The casks matter more than the whisky here. Macallan buys oak from forests in Galicia and Cantabria, has it coopered in Jerez, then seasons it with Oloroso for up to two years before a drop of spirit goes near it.
Tasting Notes
Nose
Rich dried fruit, orange peel, vanilla, and warm wood spice.
Palate
Raisins and candied citrus, sherry sweetness, subtle ginger, toasted oak.
Finish
Medium length with lingering dried fruit and gentle spice.
