Recioto is the sweet original that Amarone was born from, made the same way but stopped before all the sugar ferments out. Rich, dark, and dense enough to stand up to bitter chocolate or a wedge of aged Gorgonzola, where the residual sugar pulls the salt and funk into line rather than fighting it.
