Yoshida - Gassan Junmai Ginjo Izumo

Junmai Ginjo from Shimane Prefecture, brewed near the base of Mount Gassan. The clean, moderate acidity and restrained rice character make it the right call alongside delicate sashimi or a multi-course omakase, where a bigger drink would flatten everything in its path.

Yoshida Shuzo is a small, family-run brewery located in Izumo, Shimane Prefecture, a region on the San-in coast of western Japan with a deep historical connection to rice cultivation and traditional sake brewing.

Izumo is one of Japan's oldest cultural heartlands, and the local water and rice varieties contribute a regional character that distinguishes its sake from the better-known output of Niigata or Kyoto.

Gassan, meaning Moon Mountain, refers to the sacred peak that gives this label its name and reflects the brewery's orientation toward old-school craft. This Junmai Ginjo is brewed without added alcohol, meaning every element of flavor and body comes from fermentation alone.

The rice is milled to at least 60 percent of its original grain, which qualifies it for Ginjo classification and encourages a cleaner, more aromatic fermentation profile.

The result sits in productive tension between the fruity delicacy typical of the Ginjo category and a fuller, earthier undercurrent that speaks to Shimane's less-polished brewing tradition.

For a customer curious about regional sake identity beyond the mainstream labels, this bottle offers a direct window into a lesser-known but historically significant part of Japan's sake geography, at a price point that makes genuine exploration accessible.
