Castiglione is Vietti's entry point into Barolo, which still means serious Nebbiolo from one of the Langhe's most trusted names. Bring something that can stand up to it: braised short rib, lamb shoulder, or a plate of aged Parmigiano to let the tannin find its footing before the main course arrives.
