Junmai Ginjo Genshu means undiluted, so this is fuller and more intense than most sake at this price. That extra weight earns it a seat at the table with grilled fish, seared duck, or anything lacquered and umami-forward, where the rice character holds its ground rather than disappearing into the food.
Toko is produced by Yamatogawa Shuzo, a brewery founded in 1790 in Aizuwakamatsu, Fukushima Prefecture, a region with a long tradition of sake production supported by cold winters and exceptionally clean water from the surrounding mountains.
This bottling is a Junmai Ginjo Genshu, meaning it is brewed entirely from rice and water with no added alcohol, fermented to the Ginjo standard using rice milled to at least 60 percent of its original grain, and bottled undiluted as a genshu.
That last detail is worth noting: most sake is cut with water before bottling to bring the alcohol to around 15 percent, but genshu is left at its natural fermentation strength, typically 17 to 19 percent, which gives the sake more concentration and a fuller body than diluted equivalents.
Yamatogawa uses Yamadanishiki rice and a slower, lower-temperature fermentation to develop the fruity, aromatic character associated with the Ginjo style.
The result sits at an interesting intersection of fragrance and richness, offering more weight than a typical Ginjo while retaining the clean fruit-forward profile the style is known for. It works well slightly chilled, and holds up alongside richer dishes where a lighter sake might get lost.
