The Irishman Harvest is produced by Walsh Whiskey, an independent Irish whiskey company founded by Bernard and Rosemary Walsh in 1999. It is made from single malt and single grain Irish whiskeys from pot still and column still production, married in a blend. It is matured in American oak bourbon casks, which add sweetness and vanilla. At 40 percent ABV. It is served neat, over ice, or in a whiskey sour or highball.
