Terada Honke is one of Japan's most unconventional sake breweries, operating out of Chiba Prefecture since 1673. The brewery has become a reference point for natural sake production, working with organically grown rice, ambient wild yeast, and minimal intervention throughout fermentation.
The Junmai 80 Katori is made from Katori rice milled to 80 percent of its original size, meaning a large portion of the outer bran remains intact. This low milling ratio is deliberately rustic and stands in contrast to the highly polished rice used in premium ginjo-style brewing.
