Stillhead Distillery is in Duncan, British Columbia, on Vancouver Island, producing small-batch spirits with local grains and cask programs. The Islay Cask Rye Whisky begins as a rye distilled from a grain bill with the spicy, fruity character of the style.
After initial maturation, it is finished in casks that previously held peated Islay Scotch, adding coastal smoke and maritime character to the rye spice. It combines a peppery rye backbone with briny, phenolic notes.
