Sipsmith was founded in 2009 in Chiswick, London, by Sam Galsworthy and Fairfax Hall alongside master distiller Jared Brown.
The distillery is widely credited with reviving craft gin production in London after nearly a century of industrial consolidation, having secured the first copper pot still distilling licence in the city in over 160 years.
The gin is produced on a traditional copper pot still named Prudence, using a one-shot method in which every batch is distilled in a single pass rather than being diluted from a concentrate.
The botanical bill is a classic London Dry construction built around juniper, coriander seed, angelica root, liquorice root, orris root, cassia bark, cinnamon, ground almond, Seville orange peel, lemon peel, and dried lime peel.
That combination places it firmly in the traditional London Dry style, meaning juniper leads clearly on both the nose and palate with bright citrus support and a dry, herbaceous backbone. 6% ABV it holds enough weight to shine in a classic gin and tonic or a martini without being overpowering.
