Pessac Leognan - Ch Haut Bailly 2011

Graves Cabernet blend from one of the Left Bank's most consistent addresses, and the 2011 has had time to settle into itself. Structured enough for roasted lamb or duck confit, but the earthy, tobacco-driven character of Pessac means it also holds its own against anything with mushrooms or truffle at the table.
