Los Siete Misterios is a respected mezcal producer based in Santiago Matatlan, Oaxaca, working with traditional maestro mezcaleros across the region. This ensamble combines Espadin and Cuishe agaves, two varieties that complement each other beautifully.

Espadin provides the backbone with its reliable, roasted agave sweetness, while Cuishe, a wild agave that takes longer to mature, adds layers of herbal complexity and mineral depth.

The agaves are cooked in underground pit ovens, crushed using traditional methods, and fermented in open-air wooden vats before being double distilled in copper pot stills. The blending of cultivated and semi-wild agave creates a mezcal with more nuance than a single-variety expression.
