Lind And Lime - London Dry Gin

Lind and Lime is produced at the Port of Leith Distillery in Edinburgh, Scotland, a facility that opened in 2023 as the first single malt whisky distillery in Leith for nearly a century. The gin itself pays homage to Dr. James Lind, the Scottish physician who discovered that citrus could prevent scurvy among sailors.

True to its namesake, this London Dry style gin places lime at the center of its botanical bill, supported by juniper, coriander seed, pink peppercorn, and cubeb berries.

The distillery uses a combination of vapor infusion and direct maceration to extract flavors from the botanicals, with fresh lime peel added during the final distillation run for maximum citrus vibrancy.

The production facility operates with sustainability in mind, utilizing solar panels and responsible water management practices. At 44% ABV, Lind and Lime sits at a strength that holds up well in cocktails while remaining approachable for sipping.

The lime forward character makes it a natural fit for gin and tonics, where the citrus notes shine without added garnish. It also performs admirably in a classic gimlet or any cocktail calling for a bright, juniper backed gin with genuine citrus depth.
