La Gritona is produced at a small family-owned distillery in the town of Tequila, Jalisco, within the lowlands region known as El Valle. Founded by Melly Barajas, one of the few female distillery owners in the tequila industry, La Gritona takes its name from the Spanish term for a loud, outspoken woman.
The distillery sources 100 percent blue Weber agave from lowland fields, where the volcanic soil and warmer climate produce plants with earthier, more herbaceous characteristics compared to their highland counterparts.
Production follows traditional methods, with agaves cooked in brick ovens before fermentation and double distillation in copper pot stills. La Gritona is a reposado expression, rested for approximately eight months in American oak barrels that previously held bourbon.
This aging period adds subtle complexity without overwhelming the agave character that defines quality tequila. The result is a spirit that balances the raw vegetal notes of lowland agave with gentle oak influence.
Barajas runs the operation with an all-female production team, and the distillery maintains a modest output that prioritizes craft over volume.
