KOVAL Distillery is in Chicago, Illinois, one of the pioneering craft distilleries of the American Midwest. It was founded in 2008 by Robert and Sonat Birnecker, drawing on Robert's Austrian distilling heritage and organic grain sourcing.
This Single Barrel Bourbon Whiskey has a mash bill of at least 51 percent corn, with millet as the secondary grain instead of rye or wheat. Each batch comes from a single barrel, so there are small variations between releases. KOVAL uses only the heart cut of the distillate.
It is aged in charred new American oak barrels, which add caramel sweetness and toasted wood.
