Fukumitsuya is one of Kanazawa's oldest breweries, and Shun sits in the junmai daiginjo tier where rice polish and water precision matter most. Serve it cold alongside sashimi, steamed crab, or anything where clean ocean flavour needs a drink that won't fight back; the low acidity and silky texture let the seafood lead.

Kagatobi is the flagship label of Fukumitsuya Brewery, one of the oldest and most respected sake producers in Kanazawa, Ishikawa Prefecture, on the Sea of Japan coast.

The brewery traces its history back to 1625 and draws on the notably soft, pure water that flows from the nearby Hakusan mountain range, a defining characteristic of sake produced in this region.

The Shun expression sits within the Junmai category, meaning it is brewed using only rice, water, koji, and yeast with no added distilled alcohol. Kanazawa has long been associated with a precise regional sake style that tends toward elegance and restraint rather than weight or sweetness.
