Zuiyo Shuzo is a brewery based in Kumamoto Prefecture on the island of Kyushu, a region historically significant in the world of sake for developing the Kumamoto yeast strain, which is now used widely across Japan.
Zuiyo itself has been producing sake for well over a century, and its junmai expressions reflect the brewery's focus on clean, food-friendly styles built from regional rice and local water.
Junmai designation means this sake is brewed with rice, water, koji, and yeast only, with no added distilled alcohol, resulting in a fuller rice-forward character and a slightly firmer, rounder body compared to alcohol-added styles.
