Haku is a Japanese vodka produced by Suntory, the Osaka-based drinks company behind Yamazaki whisky and Roku gin. The name means 'white' in Japanese, and the vodka is made from 100 percent Japanese white rice, setting it apart from the wheat, rye, and potato bases common in European vodkas.
The rice is first fermented using a traditional Japanese koji process, which converts the starches into fermentable sugars before distillation. The spirit is then filtered through bamboo charcoal, a step that contributes to its notably soft and clean texture.
