Dom Perignon - 2015

Dom Pérignon is the vintage Champagne of Moët & Chandon, made by chef de cave Vincent Chaperon. The 2015 is 51% Pinot Noir and 49% Chardonnay. It spent about eight years on its lees and was disgorged in January 2023, with a dosage of 5 g/L. The summer of 2015 was one of the longest droughts in Champagne, with the warmest August in 45 years. It goes with oysters or roasted lobster.
