Chambéry Rouge from one of the oldest vermouth houses in France. Serve it over ice with a twist before dinner and it earns its keep, but it also pulls weight at the table alongside charcuterie and hard cheese, where its herbal bitterness cuts through fat the way a light red would.

Dolin is one of the oldest vermouth producers in France, based in Chambéry in the Savoie region of the Alps, where it has been making vermouth since 1821. Chambéry holds a unique geographic indication for vermouth, and Dolin is the house most responsible for defining that style.

The Rouge is a sweet red vermouth made from a base of Savoie wines, which tend to be lighter and more delicate than those used by many Italian producers.

These wines are then fortified and infused with a proprietary blend of alpine botanicals, including local herbs and roots that give the Chambéry style its characteristic finesse.

Compared to heavier Italian rosso vermouths like Carpano Antica or Punt e Mes, Dolin Rouge is noticeably lighter in body, lower in sugar, and more restrained in bitterness, which makes it a versatile choice for bartenders who want vermouth to complement rather than dominate a cocktail.

It works exceptionally well in a Manhattan, a Negroni, or any stirred spirit-forward drink where balance matters. It can also be served over ice with a twist of orange as a simple aperitif.
