Dassai's plum liqueur built on their 23 polishing-ratio sake base. The residual sugar is substantial but the underlying rice spirit keeps it from turning cloying, which makes it the right call alongside a cheese course, foie gras, or anything where richness needs a sweet counterweight rather than acid.

Dassai is produced by Asahi Shuzo in Yamaguchi Prefecture, a brewery that has built its reputation almost entirely on rice polishing ratios and precision fermentation. Their standard Daiginjo line polishes rice to 23 percent of its original grain, meaning 77 percent is milled away before brewing begins.

Dassai 23 Ume-shu takes that foundation one step further, steeping whole Nanko ume plums in the finished Dassai 23 sake rather than in neutral spirits, which is the more common and less costly approach used by most commercial ume-shu producers.

The result is a plum liqueur that retains the refined, aromatic character of a top-tier Daiginjo while gaining the tartness, depth, and fruit weight that only whole plum maceration can provide.

Because the base is a highly polished sake rather than shochu or grain spirit, the texture is notably silkier and the fruit reads cleaner and more precise. At 375ml and this price point, it sits firmly in special-occasion territory.

It works well served chilled over a large ice cube, alongside cheese courses, foie gras preparations, or on its own as a thoughtful dessert pour. For a customer already familiar with premium sake, this is a logical and rewarding next step into the ume-shu category.
