Kimoto-method Junmai from one of Japan's most respected sake houses. The lactic depth and firm acidity make it the right call alongside grilled fish, miso-glazed eggplant, or anything with a soy-based glaze.
Daishichi is one of Japan's most respected sake breweries, based in Nihonmatsu in Fukushima Prefecture, and is widely regarded as the foremost practitioner of the kimoto method. Kimoto is a labour-intensive, traditional starter culture technique that predates modern yeast cultivation by centuries.
Rather than adding commercially prepared lactic acid to the fermentation starter, kimoto brewers cultivate naturally occurring lactic bacteria through a physical process of mashing and mixing the rice mash over many hours in cold conditions.
The result is a sake with greater depth, a more complex microbial character, and a structure that holds up well to temperature variation, making it equally rewarding served chilled or gently warmed.
Sokai Reishu translates roughly to refreshing cold sake, and this bottling is crafted specifically to express a cleaner, more delicate profile than the brewery's richer full-size offerings, while retaining the foundational complexity that kimoto fermentation provides.
It carries the Junmai designation, meaning it is brewed without added alcohol and derives all of its character from rice, water, koji, and yeast alone.
At 300ml it is an ideal format for exploring a producer of this calibre without committing to a full bottle, and works well alongside seafood, light tofu dishes, or sashimi.
