Campari was created in 1860 by Gaspare Campari in Novara, Italy, and remains one of the most recognizable aperitifs in the world. The recipe is proprietary and has changed little over its history, though the brand reformulated in 2006 to remove carmine dye in favor of artificial coloring.
It is produced by Group Campari, now a major Italian spirits company, and is made by infusing a blend of herbs, aromatic plants, and fruit in alcohol and water. The exact botanicals remain a closely guarded secret, though bitter orange peel and rhubarb are widely cited as key components.
The result is a bitter, ruby-red liqueur with a distinctive sweet-bitter balance that sits at 24 percent alcohol by volume. Campari is the defining ingredient in the Negroni and the Campari Spritz, and it performs equally well in a simple Campari Soda over ice.
The 375ml format is a practical size for home bartenders who want the bottle on hand without committing to a full 750ml. For anyone building a serious cocktail cabinet, Campari is a foundational purchase rather than an optional one.
