Caffo is a family-owned distillery based in Limbadi, Calabria, in the far south of Italy, and has been producing spirits and liqueurs since 1915. Vecchio Amaro del Capo is their flagship product, named after Capo Vaticano, a promontory on the Calabrian coast.

The liqueur is made from an infusion of 29 herbs, roots, flowers, and citrus peels, all sourced from the Calabrian region, including bergamot, liquorice root, anise, and chamomile.

The recipe has remained largely unchanged since its early development and reflects the traditional southern Italian approach to amaro, which tends toward sweeter, rounder profiles compared to the more bitter styles of the north.

At 35 percent alcohol by volume, it sits at a moderate strength and is traditionally served ice-cold, straight from the freezer, which is a well-established local custom in Calabria. The cold temperature softens the bitterness and emphasises the herbal sweetness.

It can also be used in cocktails as a substitute for other Italian amari, and works well in a spritz or alongside aged spirits.
