Aviation American Gin

Aviation American Gin is produced at House Spirits Distillery in Portland, Oregon. It was created in 2006 as a collaboration between distiller Christian Krogstad and bartender Ryan Magarian, as a departure from juniper-heavy London Dry styles.

The seven botanicals are juniper, cardamom, coriander, lavender, anise seed, sarsaparilla and dried orange peel. Juniper is balanced against floral and spice notes, in what is called an American or New Western style. Lavender and cardamom are prominent.

It uses a neutral grain spirit base and single-shot distillation in a pot still. It is used in the Aviation cocktail, Bee's Knees and French 75.
