Aviation - American Gin 375ml

Aviation American Gin is produced by House Spirits Distillery in Portland, Oregon, a craft operation that helped define the American contemporary gin movement.

First released in 2006, Aviation was developed in collaboration with bartender Ryan Magarian to create a gin that works seamlessly in cocktails rather than fighting for dominance.

The botanical bill includes juniper, cardamom, coriander, lavender, anise seed, sarsaparilla, and dried orange peel, with juniper deliberately pulled back to allow the other botanicals equal presence.

This approach places Aviation firmly in the contemporary or New Western style, departing from the juniper-forward profile of traditional London Dry gins. The distillation process uses a maceration method followed by distillation in a pot still, resulting in a softer, more integrated spirit.

At 42 percent ABV, it carries enough weight for mixing while remaining approachable for those new to gin. Aviation has become a modern classic behind the bar, particularly well suited to Aviation cocktails, martinis, and gin sours where its floral and spice notes can shine without overwhelming other ingredients.

For sipping, it offers an accessible entry point for drinkers who find traditional gins too piney or aggressive.
