Adriatico Amaretto is produced in Italy by a small, independent operation reviving traditional amaretto methods. It uses Sicilian bitter almonds from a single family grove near Noto in southeastern Sicily.
The almonds are cold-pressed to extract their oil, and the paste is macerated in alcohol, then blended with cane sugar and water. No artificial flavourings or colouring are used. It is less syrupy than most amaretto, more nutty, with a bittersweet balance. At around 28 percent alcohol by volume.
It is used in an Amaretto Sour and served over ice as a digestif.
