Highland Park 12 Year Old
Orkney Islands · 750ml
Highland Park sits on the Orkney Islands, the northernmost whisky region in Scotland, and the 12 Year Old is the clearest expression of what makes this place distinct. The distillery cuts its own Orcadian peat, which burns cooler than Islay peat and produces a heather-honey smoke rather than anything medicinal. Sherry-seasoned European and American oak casks add dried fruit and warm spice without burying the spirit. At 43 percent ABV, it has enough weight to reward attention but none of the aggression that puts newcomers off peated whisky.

Village-level Burgundy from JC Boisset, a reliable négociant with deep roots in the region. Lean Pinot Noir at this level is built for the table, not the spotlight. Roasted chicken, duck breast, or a mushroom-heavy pasta will bring out everything the wine has to offer, the acidity cuts through fat and the structure stays out of the way.
